Chocolate Peanut Butter Protein Muffins

I’m one of those annoying morning people.  The kind that wake up early, bang the pots, pans and dishes to put them away then start cooking for the day.  My old roommate @lanapet would storm out of her room to yell at me to  stop chopping onions at 6am on a Saturday!   BUT she sure did like those egg bites.   However,  there are just some days that I can’t get my morning act together and need a quick grab n go protein snack on my way to work.  I need something filling, healthy and can be the perfect accompaniment to a hot cup of coffee.  These chocolate peanut butter protein muffins do the trick!  Full of healthy fats to jump start and fuel my body for the day.   

  • 2 ripe bananas
  • 3/4 C plant based milk
  • 1/2 avocado
  • 1/4 C honey
  • 1/4 C peanut butter
  • 1 C almond flour
  • 2 scoops chocolate protein powder
  • 2 Tbsp Cacao powder
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/4 C crushed peanuts

Preheat oven to 350 degrees.   Spray or oil a muffin pan with coconut oil.   

In a large bowl, mash well the bananas and avocado.   Stir in the  honey, peanut butter, milk, beaten egg and vanilla.   

In a separate bowl, whisk together the almond flour, protein powder, cacao, baking soda and salt.

Incorporate the dry ingredients into the wet and gently mix.  Fold in the peanuts.   Scoop the batter 3/4 full into the muffin pans.  You can put a 1/4 tsp on top and swirl it with a toothpick for a fun design.  Or add more crushed nuts on top.

Bake for 20 min or at until toothpick comes out clean.
