Herb Lime Corn

I can get a little corny sometimes… or at least that’s what my friends tell me.  But what’s not corny is this fresh herb, chipotle lime corn.  Get it on the cob since we are in peak season right now and it should be super sweet. Let me know what you think of this recipe.  I’m all EARS  ????.

  • 6 ears fresh grilled corn
  • 1/2 c room temp pasture raised butter
  • 2 tbsp fresh chopped herbs (I used chives and tarragon)
  • 1 juice and zest of a lime
  • 1/8 tsp chipotle powder
  • 1/2 tsp salt
  • 1/4 tsp pepper

First prepare your butter mixture.  With room temperature butter, mix it well with the chopped herbs, chipotle powder, lime zest, salt and pepper.  Grill corn until char marks appear.  Or you can boil until tender.  Holding the thickest part of the corn up into a deep bowl, cut the kernels off with a sharp knife. This will help catch all the niblets. While corn is still hot/warm combine your butter mixture in and mix well.  Squeeze yours lime over and mix again.
